Creamy Gochujang Sauce

Batch ingredients

Makes 500 ml (≈8 portions).

  • 6 tbsp gochujang6 tbsp gochujang
  • 4 tbsp soy sauce4 tbsp soy sauce
  • 3 tbsp maple syrup3 tbsp maple syrup
  • 2 tbsp rice vinegar2 tbsp rice vinegar
  • 2 tbsp sesame oil2 tbsp sesame oil
  • 4 garlic cloves, grated4 garlic cloves, grated
  • 4 cm ginger, grated1½ in ginger, grated
  • 150 ml water⅔ cup water
  • 2 tbsp cornflour (optional)2 tbsp cornstarch (optional)

Method

  1. Whisk gochujang, soy, maple, vinegar and sesame oil together.
  2. Stir in garlic, ginger and water.
  3. Simmer gently 5 minutes; slacken cornflour in cold water and stir in to thicken if you want a glaze.
  4. Cool fully, then portion into jars or a freezer tray.
  5. Reheat from frozen with a splash of water.
